How many of you skip breakfast in the morning? Somehow I always let my busy mornings bump my breakfast out of my schedule. Did you know that breakfast is the most important meal of the day? (Yes…MOM…we know…) Web MD says “Many studies have linked eating breakfast to good health, including better memory and concentration, lower levels of “bad” LDL cholesterol, and lower chances of getting diabetes, heart disease, and being overweight.” (Geesh!)
What if I told you this very HEALTHY and delicious breakfast could fit into your busy morning? My recipe for Honey Cinnamon Quinoa Oatmeal will take all but 5 minutes of your time and that is ALL! The health benefits of eating quinoa and oats are too many to name. You’ll be able to toss the quinoa and oats into milk (1 minute) and while they steam to perfection (15-20 mins) you can do a lot!! Fifteen wonderful (or crazy) BUSY minutes…I know I can do a lot in that amount of time. Here are some things you can do in 15 minutes:
Get kids dressed, feed kids, walk dog, walk kids (kidding…), feed pets, finish last nights homework (for your kid..ha), change outfit twice, put on makeup, read your bible, change and dress your baby, paint nails, run on treadmill, watch the news, clean the kitchen, talk to your mom on the phone (or talk to your mom while doing any of the above) and go back to sleep..(I WISH).
Now your breakfast is done! Add cinnamon, honey, dried fruit and nuts (optional), stir and enjoy! Whether you eat it in the car, at the kitchen table or at your desk at work; You ATE the MOST important meal of the day..with little/no effort..and it was healthy. (NEED I SAY MORE>>>)
SO no more excuses!!! Get off the phone with your mom and cook with me!

The Guiding Spoon
Five Minute Power Breakfast
- 1 cup of quinoa (rinsed)
- 1/2 cup of raw old fashioned oats
- 2 1/2 cups of low-fat or skim milk
- 1 pinch of salt
- 1/4 tsp of cinnamon
- lemon slice (optional)
- fresh berries (optional)
- 2-3 tbsp honey, agave nectar or brown sugar (to taste)
- optional: dried fruit, nuts
To serve: Toss on your favorite fresh fruit, dried fruits or nuts and enjoy!
- Bring milk, pinch of salt, quinoa and oats to a boil, reduce to simmer.
- Let simmer for 15-20 minutes (or until milk is absorbed)
- Toss in dried fruit, honey and pinch of cinnamon (let simmer 5 more mins)
- Remove from heat, top with nuts or fresh fruit, drizzle honey and enjoy!
