Today, I am delivering (as promised) a German family recipe!! This recipe is from my husbands grandmother Helena (born in the 1900’s). This recipe was passed to Helena and down to her daughter Agnes (my mother-in-law) making this well over 100 years old. Talk about vintage.
I felt so much love making this cake-thinking about the love and heart that many family generations have put into this special recipe. I left the recipe as it was not “adding” any of my quirks but leaving it to stand on its own tradition.
As a boy, my husband remembers the smell of this cake as he entered his home after a long day at school. Today after many many years he was able to relive this special memory. Tears of Joy were met with each bite of this scrumptious warm cake.
Oma’s (grandma in German) apple cake is moist, fluffy and has a tender juicy bite of apples. Its really just special. Its like a wonderful, warm hug from your grandma. Nothing can be better than that.

The Guiding Spoon
Oma's Apfelkuchen (Grandma's Apple Cake)
- 4-5 yellow delicious apples (peeled, cored and halved)
- 250 grams of cubed unsalted butter or (2 sticks + 1 1/2 tbsp)
- 250 grams sugar or (1 cup + 2 tbsp)
- 250 grams of unbleached all purpose flour or (1 1/2 cups + 1 tbsp)
- 50 grams milk
- 2 tbsp cornstarch
- 2 tsp cream of tarter
- 1 tsp baking powder
- 1/2 tsp salt
- 5 eggs (separate yolks and whites into small bowls)
- Peel, halve and core all apples. Using a small sharp knife start 1/2 inch from the tip of the apple and slice into 1/2 slices (keeping slices attached to the top of apple) Then cut into smaller 1/4 inch slices. Set aside.
- Cream egg yolks, butter, and sugar on high speed until mixed.
- Preheat oven at 350 degrees.
- Stir salt, baking powder, cream of tarter and cornstarch into flour. Sift into a medium sided bowl.
- Add sifted ingredients to mixer on lowest speed, once incorporated add milk. Scrape down edges of bowl and stir once more.
- Clean mixing bowl and beat egg whites on medium until stiff peaks; gently fold into your batter.
- Butter a spring form pan or cake pan (sides and bottom) Pour your mixture into the pan and spread evenly.
- Gently press your apples (sliced side up) into the mixture (just slightly- you don’t want them to sink)
- Put into oven and bake 45-55 minutes or until center temp reads 96 Celsius. You can also use a toothpick and when the toothpick comes out clean its baked.
- Let cool, release from spring form and sprinkle with powdered sugar.
- Try it with any apples you have on hand! I used apples I had on hand (Granny Smith)
